I took the recipe from 
this article and decided to make wraps.
I made a few changes to the recipe.
Recipe for the Filling:
- 1 cup black rice 
- 1 Avocado
- 4 cloves garlic, minced
-  4 scallions, green and white parts, thinly sliced
- 2 cups thawed frozen corn kernels
- ¼ cup lemon 
-  ½ cup chopped cilantro leaves
- 2 teaspoons ground cumin
- ½ teaspoon dried oregano
- ¼ teaspoon dried thyme
- 
- ½ cup dried cranberries
-  Salt and freshly ground pepper to taste
- ¼ cup toasted pumpkin seeds for topping
 
- For the Wraps:
 
- 
- 8 Leaves of Collard Greens
- 8 teaspoon of Hummus
